Frosted Lemon Cookies



2 1/2 cups all-purpose flour
1 1/2 cups sugar
1 cup unsalted butter
2 large eggs
1 T. freshly grated lemon zest
1 T. lemon juice
1 1/2 tsp. cream of tarter
1/4 tsp. salt


2 1/2 cups powdered sugar
1/4 cup lemon juice


Heat oven to 400 °F.

Combine all cookie ingredients in bowl. Beat at low speed, scraping bowl often, until well mixed.

Drop dough by rounded teaspoonfuls, 2 inches apart, onto ungreased cookie sheets. Bake 6-8 minutes or until edges are lightly browned.

Combine all glaze ingredients in bowl; stir until smooth. Frost warm cookies with glaze.

Sprinkle with lemon zest, if desired.
