½ pound butter, softened to room temperature
2 cups brown sugar
3½ cups flour
½ teaspoon salt
1 teaspoon baking soda
½ teaspoon cinnamon
1 cup chopped nuts
Cream butter and sugar together. Beat eggs lightly and then beat into butter mixture. Sift together the flour, salt, baking soda, and cinnamon. Stir into wet ingredients and mix well. Fold in the nuts.
Divide the dough into 4 equal parts and roll into logs approximately 1 inch in diameter. Wrap in plastic and refrigerate several hours or overnight. May be frozen until ready to use.
Preheat oven to 400 degrees F.
Slice cookie logs into rounds approximately 1/8 inch thick and place on greased cookie sheets, leaving 1 inch between each cookie. Bake for about 10 minutes or until golden. Cool on wire racks.
Yield: About 6½ dozen
